---------------------- Fried Basil GarnishWash and dry (make sure leaves are extremely dry) basil, leaves only Pour enough extra virgin olive oil in a skillet to just cover basil leaves and bring the temperature up until the olive oil is just starting to steam. (Never use anything but extra virgin olive oil to fry with. Regular olive oil will give off too much smoke and make your kitchen an unhealthy place.) Drop in basil leaves (one or two at a time). Be very careful, as basil contains a lot of moisture inside the leaves and it will have a tendency to splatter. After 20 to 30 seconds, use tongs to turn the leaves over and cook the other side. When leaves look slightly transparent they are done. Remove and let drain on a paper towel. If you would like to purchase a copy of the cookbook, please let us know.
