Mint Poached Pears

Ingredients
6 cups water
1 cup sugar
1 oz. mint, destemmed & rough shopped
4 whole cloves
2 jiggers fine Kentucky Bourbon

Fruit of choice - pears, apples, etc.

Combine all ingredients in a sauce pan and bring to a slow boil.
Add peeled pears and return liquid to a simmer. Simmer pears in liquid for approximately 10 minutes.
Remove from poaching liquid & serve hot or cold.

Cabbage Salad

Ingredients
8 cups cabbage, shredded and chopped
4 green onions, chopped
.5 cup sunflower seeds, toasted
.5 cup slivered almonds
1 package Ramen noodles (chicken) smashed

Dressing

1 package Ramen noodle seasoning mix
.25 cup salad oil
3 tablespoons cider vinegar
2 tablespoons sugar
salt to taste
pepper to taste

Combine salad ingredients and toss
Combine dressing ingredients and toss with cabbage

Chef's Angel Hair Pasta

ingredients
8 ounces angle hair pasta, cooked al dente
2 tablespoons olive oil
16 pea pods, julienned
.5 red pepper, julienned
.5 yellow pepper, julienned
.25 cup shiitake mushrooms, thinly sliced
.5 cup napa cabbage, thinly sliced
.25 cup daikon radish, julienned
.25 cup green onions, sliced on bias

After draining pasta, toss with remaining ingredients.

Dutch Baby

Ingredients
.5 cup milk
.5 cup all purpose flour
.25 cup sugar
2 large eggs

For Skillet
.5 stick butter

Let eggs come to room temperature. This step is very important.

Whisk all ingredients together till smooth.

*In skillet melt the butter then roll skillet around coating the entire surface.

This recipe screams for a cast iron skillet.

Pour ingredients into prepared skillet and cook on stove without stirring for 1 minute.

Now place it in the oven.

If you have a light in your oven, turn it on. You are going to want to watch thins. For the first few minutes you will think that I've made this up, but in time the Dutch Baby will start to rise. In about 15 minutes it is ready to eat.

Serve immediately. Dust with powdered sugar or use the best fruit preserves or freshest fruit you can get.

Hot Spiced Cider

Ingredients
8 cups apple cider (I prefer non-filtered)
6 whole cloves
1/4 tablespoon freshly ground nutmeg
2 whole cardamom seeds
4 sticks cinnamon

Easy method!
Put all ingredients in a crock pot in the order they are listed.
Turn on low. Put lid on and go about your business.
Cider is ready to drink in about 30 minutes.

Or

Put all ingredients in a 3 quart saucepan in the order they are listed.
Bring to a boil at medium-high.
Once liquid boils, turn to simmer.
Simmer for 10 minutes.
Strain out solids, if desired.
Serve hot.

This recipe is also very tasty and refreshing served chilled.
