Warm Potato, Sausage & Goat Cheese Salad

Ingredients
1 1/2 lbs. fresh sausage (we used Italian sausage with the casing removed)
2 lbs. white, red or yellow potatoes, unpeeled and well scrubbed

Dressing
1 shallot finely chopped
1 clove of garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 teaspoon dijon mustard
1 tablespoon fresh lemon juice
3 tablespoons white wine vinegar
3/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup of crumbled goat cheese

Garnish
4 tablespoons fresh parsley

Cook sausage till done. (If you are removing the sausage from a casing, as I did on the show, you might wish to crumble the sausage into bite size pieces.)

Cook (boil in salted water or roast) potatoes till just soft. Add salt to taste and combine with sausage.

Mix dressing ingredients in the order they are listed. Pour over still warm potatoes & sausages.

Garnish with fresh parsley and add more crumbled goat cheese to serve.
